Courgette Mezze Tagliatelle
Courgette mezze tagliatelle is a pasta recipe I made up. I had bought a jar of the Belazu roasted courgette mezze and just wanted to try and make something with it. This is the dish I created, and it tasted fabulous. My family loved it.

Serves 5
Ingredients
400g tagliatelle
1 tbsp light olive oil
25g butter
4 crushed garlic cloves
6 mushrooms washed & sliced
1 courgette chopped (not too thick)
5 small fresh tomatoes chopped
Salt & black pepper to taste
4 -5 tbsp Belazu roasted courgette mezze
1 tsp dried basil
1 tsp dried parsley
¼ tsp cayenne pepper
2 -3 tbsp single cream
100g Gran Padano cheese
1 cup pasta water
Instructions
Fill a large pan with boiling water, cook tagliatelle as per instruction on the packet, drain, and drizzle over a little olive oil to stop it sticking. Remember to reserve a cup of the pasta water.
In another pan, heat oil and butter and add the crushed garlic.
Then add mushrooms, stir fry for a I minute or so and add tomatoes.
Cover pan and leave tomatoes to cook until softened.
Add courgettes, salt and pepper, basil, parsley, cayenne pepper and Belazu roasted courgette mezze.
Stir well, add ½ cup water and simmer for a couple of minutes. You can add more water if needed.
Next, stir in the single cream and mix in the cooked tagliatelle.
Sprinkle on the Gran Padano cheese and combine well.
Serve hot with a side salad or warm crusty bread.
P.S. If you don’t want to use tagliatelle pasta, you can use pappardelle, fettucine or linguine too.
