Boiled Egg Curry

When you fancy a quick and easy curry, this is the one to make. It’s a delightful onion and tomato based curry with aromatic spices and the addition of hard boiled eggs. Takes only 30 minutes to prepare and tastes amazing!

Cooking Time: 30 minutes

Serves 5-6

Ingredients

10 eggs

2 tbsp oil

25g butter

2 tsp cumin seeds

1 small stick of cinnamon

1-2 green chillies, slit

2 medium onions finely chopped

Salt to taste

2 tsp garlic paste

2 tsp ginger paste

Turmeric (very little)

2 tsp red chilli powder

2-3 tsp coriander cumin powder

2 large tomatoes chopped

1 tbsp tomato puree

¼ cup water (more if needed)

2 tsp honey

½ tsp garam masala

Fresh coriander for garnish

Instructions

Place eggs in boiling water and boil for 8-10 minutes. Once boiled, peel and cut each egg into half lengthways.

Heat oil and butter in a large frying pan.

Add cumin seeds, cinnamon stick and green chillies.

Then stir in the onions and sauté until golden brown.

Add salt, garlic and ginger paste and your spices – turmeric, chilli powder and coriander and cumin powder.

Mix well and then add fresh tomato, tomato puree and water.

Leave the masala to cook covered until the tomatoes become soft.

Stir in the honey and place boiled eggs in masala, making sure to coat them with the sauce.

Cook covered for another 3-4 minutes, garnish with coriander and serve hot.
