Bombay Sandwich
A nutritious and filling toasted sandwich that is very popular in Mumbai. Soft buttered slices of bread smeared with generous amounts of spicy green coriander mint chutney, then beautifully layered with an array of colourful vegetables and cheddar cheese.

Ingredients
6 slices of buttered bread
1 large tomato cut into rounds
½ medium onion sliced
2 small or 1 medium potato boiled and sliced
30g red pepper
30g yellow or orange pepper
12 cucumber slices
Coriander mint chutney
Bombay sandwich masala or chaat masala
100g grated cheddar cheese
Instructions
Spread the chutney on all six slices of bread.
Top two slices with onion, peppers, tomato and sprinkle with the sandwich masala generously.
Place the next slice of bread on top. Chutney side down.
Then layer it with cucumber, cheese and sliced potatoes. Sprinkle with sandwich masala.
Top with the last slice of bread, making sure that it is buttered well on top.
Toast in panini press and enjoy.
