Crumbly Jammy Biscuits
This is a Waitrose recipe I have been using for years now. Everyone loves these biscuits in our house, and they don’t usually last long. They are too addictive. Sweet crumbly, buttery biscuits that just melt in your mouth. Delicious with a lovely cup of tea, a glass of milk or squash.

Cooking time: 15-20 minutes
Makes approx. 30-35 cookies
Ingredients
230g soft butter
100g caster sugar
1 tsp vanilla extract
280g plain flour, sifted
1/2 tsp baking powder
Jam – you can use any flavour you like.
Instructions
Heat oven to 180 C and line some trays with baking parchment.
Whisk together the sugar and butter until pale and fluffy.
Stir in the vanilla extract.
Then fold in the flour and baking powder to form a soft dough.
Make small balls from the dough and place on baking tray leaving a gap between each one.
Use your finger to make an imprint into each ball and then fill with a little jam.
Bake in oven for 15-20 minutes until golden brown in colour.
P.S. You can put a couple of chocolate chips or chopped pistachios nuts on top of each biscuit instead of the jam.
