Mushroom Chasseur with Chicken Style Pieces

This is my version of a meat free Chicken chasseur recipe. It is a simple classic French dish that is usually prepared with chicken and is otherwise known as Hunter’s chicken. The delicious reduced chasseur sauce is made using onions, garlic, tomatoes, mushrooms, white wine, stock and thyme. A beautiful rich, comforting dish!

Serves 4

Ingredients

  •  2 tbsp. olive oil
  • 40g butter
  • 2 medium onions finely chopped
  • 5 garlic cloves crushed
  • 350g button mushroom
  • 200g meat free chicken style pieces (optional, just add more mushrooms or chicken if preferred)
  • 3 tbsp. plain flour
  • 200ml of white wine
  • 350g passata or chopped canned tomatoes
  • 1 tbsp. tomato puree
  • 600ml vegetable stock
  • 2 tsp sugar
  • ¼ tsp black pepper (more if required)
  • 2 tbsp. fresh thyme (or dried)
  • Salt to taste
  • Dash of Worcestershire sauce (optional)
  • Fresh chopped parsley to garnish

Instructions

Add the oil and butter to a large frying pan.

Once butter has melted, add chopped onion and garlic and fry until soft and transparent.

Then add chicken style pieces if using and cook until they have browned a little.

Turn down the heat and stir in the plain flour.

It will form a paste.

Next, pour in wine and let it burn off slightly.

Add your chopped mushrooms and cook for a few minutes.

Then add the passata followed by the stock, sugar, pepper and the fresh thyme.

Reduce the heat and simmer for about 15 minutes until the sauce has thickened and reduced.

Add the Worcestershire sauce if using and stir.

Serve topped with chopped parsley with rice or mashed potatoes.
