Oat Biscuits
This simple and easy oat biscuit recipe is from my lovely, close friend Ranjan, who is an amazing cook and a great inspiration to me. I have always looked upon her as a big sister and always call on her for recipes when I need ideas.
These wonderful golden biscuits have a delightful crispy crunch and are perfect for dunking into a hot mug of tea or a cold glass of milk.
Makes 60-65 biscuits
Ingredients
- 250g self-rising flour
- 160g castor sugar
- 250g butter
- 125 oat/porridge
- 100g coconut
- 1/4 cup warm milk
- 1 teaspoon Soda bicarbonate
Instructions
Turn on oven to gas mark 180 degrees.
Mix butter/ sugar until fluffy then add all ingredients except milk.
Add milk gradually as required – you may not need to use it all.
Make small round balls (size of a walnut) and flatten slightly (do not make too thick).
Bake until golden brown (16-18 mins) and enjoy with a hot cuppa or a nice cold glass of milk.
Note: If you don’t like coconut you can reduce amount and add in extra oats instead or replace it altogether for more oats.

I made these and they came out way too big and only about half as many biscuits as you suggested from the same ingredients
When you say small ball and flatten, how small.
Mine were a golf ball size which I guess was way too big?

Sorry, I should have been more specific about the size. A golf ball size is a little too big. Maybe, half the size of that would have been fine or the size of a walnut.
