Pawa Bateta

Pawa Bateta is a quick and easy savoury Gujarati snack made from flaked rice (pawa) and potatoes (bateta). It makes a great breakfast/teatime snack and a delicious light and healthy lunch. The cashew nuts in this recipe adds a lovely texture and the small pieces of potato in between the soft pawa compliments the dish well.

Serves 4

Ingredients

  • 2 tbsp. oil
  • ½ tsp mustard seeds
  • ¼ tsp cumin seeds
  • 6-8 curry leaves (limbro)
  • 1 ½ green chilli finely chopped
  • 1 small onion finely chopped
  • 1 large potato finely diced
  • 10-12 cashew nuts
  • ¼ tsp turmeric
  • Salt to taste
  • ½ tsp chilli powder
  • ½ tsp garlic paste
  • ½ tsp ginger paste
  • 2 tsp sugar
  • 2 ½ cups pawa 
  • 2 tbsp. water (more if needed)
  • 1 tbsp. lemon juice (or to taste)
  • Fresh coriander for garnish

Instructions

Heat oil in a pan and add mustard seeds and then the cumin.

Once mustard seeds have popped then add the curry leaves and green chilli.

Add in cashews and stir fry until slightly browned.

Then add the onions and potatoes and sauté for about 3-4 minutes.

Wash the pawa in sieve over running water and leave to drain.

Add garlic, ginger, turmeric, salt and chilli powder to onion and potato mixture and mix well.

Then add the pawa, sugar and water and fold into the mixture.

Cover pan and cook for a 3-4 minutes.

Stir in the lemon juice and garnish with fresh coriander.

Serve with a dollop of greek yoghurt.

P.S You can add peanuts instead of cashews if you prefer or even try it with both.
