Spring Onion Shaak

Shaak is what Gujarati’s refer to as a vegetable based curry. Also known as sabzi or sabji. This is a very quick and easy recipe of Indian shaak made from large spring onions. These large spring onions are usually available to buy in most Indian grocery stores. The beauty about this dish is that it only takes minutes to prepare, uses only a few simple spices and makes a delightful side dish to your regular weekday meals. I like to eat it with chapati or rotla (millet bread) or Gujarati khichdi which is a rice and lentil dish.

Prep Time: 5 minutes

Cook Time: 10-15 minutes

Total Time: 20 minutes

Serves 2-3 (side dish)

Ingredients

1 ½ tbsp oil

¼ tsp mustard seeds

¼ tsp cumin seeds

Small dried red chilli

3 large spring onions chopped

Salt to taste

Turmeric – very little

2 tsp coriander cumin powder

½ tsp chilli powder (more if you like it spicy)

1 tsp garlic paste

1 tbsp passata

1 tbsp water

Fresh coriander for garnish

Instructions

Wash and chop the spring onions.

Heat oil in a pan, add mustard seeds and leave to pop.

Add in dried red chilli, cumin seeds and let sizzle.

Then add your chopped spring onion, garlic paste, salt, turmeric, chilli powder and coriander cumin powder and stir well.

Cook covered for 2-3 minutes.

Add passata and water and cover and cook for further 5-10 minutes.

Garnish with coriander and serve.

P.S You can also add sev (small thin crispy noodles made from chickpea flour) or a diced potato to the curry which tastes great too. However, if you prefer a dry curry then you can add a tablespoon of roasted gram flour (chickpea flour) to it.
