Sticky Sesame Cauliflower

There are quite a few different variations of this dish. In my recipe the cauliflower is crispy and crunchy on the outside and soft from the inside. It has been coated in a cornflour batter, baked and then coated in a sticky sweet and spicy sesame sauce.

Ingredients for cauliflower

4 tbsp. of corn starch/cornflour

½ tsp of garlic powder

Salt to taste

½ tsp of black pepper

½ tsp cayenne pepper

5-6 tbsp of water

2.5 tsp of sesame oil

1 cauliflower, chopped into small florets

Ingredients for sesame sauce

1 tbsp sesame oil

1 tbsp ginger grated

4 cloves of garlic minced

1 large red chilli or use 2 tsp. siracha sauce

6 tbsp. tamari or soy sauce

8-9 tbsp. maple syrup

2 ½ tbsp. rice vinegar

4 tsp corn starch/cornflour

150 ml water

Toasted black and white sesame seeds

Chopped spring onions for garnish (optional)

Chopped coriander for garnish

Instructions

Mix the dry ingredients for the cauliflower, then stir in the water and oil to make a paste.

Add cauliflower and coat well, then bake in preheated oven 200 C Fan for 30 minutes.

While cauliflower is cooking, heat sesame oil in a pan.

Add garlic, ginger and chilli and cook for a minute.

Stir soy sauce, rice vinegar and maple syrup in a small bowl.

Add mixture to pan and bring to boil.

Mix corn flour in water and add to pan and boil again to thicken.

Stir in some sesame seeds.

Once cauliflower is baked, wait until it is cooled before transferring cauliflower to sauce.

Mix well and place it back in the oven for 6-8 minutes (optional).

Sprinkle with coriander and sesame seeds and serve over rice, in lettuce wraps or in bao buns.
