Tomato Chutney

Tomato Chutney

A chutney similar to a tomato salsa that is so quick and easy to prepare and tastes great with absolutely anything. With its appetising fresh and spicy flavours you can’t help wanting more and more. My family love it, so I always make a large bowl full to satisfy them all. I like using ripe tomatoes, but you can also use unripe ones or prepare it using just tomato passata. It goes really well with a variety of my recipes such as spinach patra, dhokla and bhajia. The chutney is pretty versatile and tastes equally great as a salsa dip with nachos, crackers or even spread in a sandwich with some cheese.

Ingredients

  • 2 Fresh tomatoes
  • ½ red pepper (optional)
  • 2 cloves garlic
  • 1-2 green chillies
  • Salt to taste
  • 1 tsp honey
  • ¼ tsp cumin seeds (jeera)
  • 1 tbsp. passata
  • 2 tbsp. chopped fresh coriander
  • 1 tbsp. desiccated coconut

Instructions

Put all the above ingredients in a blender except the coriander and desiccated coconut.

Blend to a smooth consistency.

Taste and adjust if need be.

Add coriander and coconut and give it another very quick blitz.

Enjoy!
