Vegetable & Onion Bhajiya – Fritters

Bhajiyas or bhaji as known to most are a tasty Indian snack that are very much like a fritter and can also be served as a starter. They are deep fried, have a delicious crispy crunchy batter and are full of flavour and spice. An onion bhaji is probably more familiar to most people (as shown in my picture), but a bhaji can be made with a range of different vegetables and fillings and these are definitely a more preferred way of eating them in my household.

Ingredients

  • 1 medium potato diced
  • 1 large onion cut into thin strips
  • ½ cup of frozen peas
  • ½ cup of frozen sweet corn
  • ½ red pepper thinly diced
  • 1-2 fresh green chillies
  • Handful of chopped fresh coriander
  • Handful of chopped fresh spinach
  • Fresh breadcrumbs made from 1-2 slices of bread
  • Salt to taste
  • ¼ tsp. of turmeric
  • ½ tsp. sugar
  • 6-8 tablespoons of gram flour (chickpea flour)
  • ½ tsp. red chilli powder
  • ½ tsp. ajwain seeds (optional)
  • water to make batter

Method

Mix all the above ingredients together in a large bowl. 

Leave mixture to sit for half and hour so that the water releases from the vegetables.

Gradually add enough water to make a thick batter. Make sure it is not too runny.

Heat some oil in a wok for deep frying.

When hot add small spoonful’s of the batter to it and cook on medium heat.

Make sure to turn the fritters while frying to allow them to cook through evenly.

Take out the fritters when they are golden brown in colour.

Serve with my tomato chutney, tamarind chutney or chutney/dip of your choice.

P.S Leftover bhajiya can be used the next day in a sandwich, burger or filled pitta. You can also use leftover rice in this recipe instead of the breadcrumbs.
